🌱 HOW WE CULTIVATE...

Our coffee begins with the careful selection of strong organic seeds, nurtured in shaded nurseries before being planted in the fertile highlands of Olancho, Honduras. Grown under natural shade and enriched by mineral-rich soil, our coffee is cultivated without pesticides or artificial fertilizers. Every stage is done by hand, respecting nature’s rhythm — from growth to harvest, where each cherry is hand-picked at its perfect ripeness.

☀️ HOW WE DRY IT...

After harvest, the beans are carefully pulped and undergo a washed (natural) process, then are slowly sun-dried on raised beds using traditional methods. This meticulous approach allows for even airflow, preventing mold and preserving the bean’s integrity without the use of industrial dryers — only wind, light, and time. The result is a coffee with enhanced sweetness, refined acidity, deeper aroma, and a richer, more authentic flavor profile.

We roast in small micro-batches to preserve the natural profile of every bean. Never pre-roasted or stored for long periods, each batch is crafted fresh and with intention. This slow, controlled process enhances the bean’s unique notes — from delicate florals to rich cocoa and subtle fruit — delivering a balanced, authentic, and exceptional cup every time.

🌀 HOW WE GRIND...

Grinding is an art that defines the essence of every cup. Our beans are kept whole to preserve their natural oils, aroma, and integrity until the very last moment. When grinding, we use precision methods that avoid excess heat, protecting the bean’s true character. Each grind is tailored to its brewing method — from French press to espresso — and done only upon request, ensuring maximum freshness and a vibrant, authentic experience in every cup.
